Nanna Nola’s Oldtime Recipe Of The Week: Traditional Shortbread

A work colleague from our production dept, has been busy making these yummy shortbreads for us to try. They are truly delicious.

INGREDIENTS:
225g plain flour, sifted
115g rice flour
115g caster sugar
Pinch of salt
225g butter, at room temperature

METHOD:
Preheat oven to 150°C.
Line a baking tray.
Combine flour, rice flour, sugar and salt in bowl.
Rub in butter and knead gently until a smooth dough forms OR place all in a food processor and process until a dough forms.
Transfer on to floured board and flatten with hands.
Use biscuit cutters.
Place on to tray and prick with a fork.
Bake for 20 to 30 minutes or until light golden.
Allow to cool on tray.
Enjoy.
