Nanna Nola’s Oldtime Recipe Of The Week - Easy Quiche

A very tasty and easy quiche to make. A good way to use up those eggs when you are feeling guilty about not using them for cakes and slices.

INGREDIENTS
6 eggs
1½ cups milk
¾ cup thickened cream
¾ cup self raising flour
Salt and pepper, to taste
6 rashers short cut bacon, diced
1 small to medium onion, finely diced
¼ red and ¼ green capsicum, finely diced
1 cup grated tasty cheese
Extra grated tasty cheese
1 tomato, sliced
METHOD
Preheat oven to 180°C. Lightly grease a pie dish.
In a large bowl, whisk eggs then add milk and cream, whisking until well combined.
Whisk flour, salt and pepper into egg mixture. Add bacon, onion, capsicum and cheese to mix. Pour the mixture into the pie dish. Decorate top with sliced tomato then sprinkle with extra cheese.
Cook for approximately 45-50 minutes. Serve with a salad
