Nana Nola's Oldtime Recipe of the Week – Easy Apricot Slice

I make this slice and use it as a dessert. Serve with a scoop of vanilla ice-cream or a dollop of cream.

Ingredients:
1½ cups plain flour
¾ cup caster sugar, plus extra for sprinkling
1 tsp baking powder
Pinch of salt
3 eggs
¼ cup milk
2 tsp vanilla
180g softened butter
14 apricots (tinned)

Method:
Preheat oven to 180°C. Grease and line a 20cm x 30cm slice tin.
Sift the flour, sugar, baking powder and salt into a large bowl and make a well in the centre. Place eggs, milk and vanilla in another bowl and mix to combine.
Pour the egg mixture into the well in the dry ingredients, add the butter and beat with electric beaters for 2 minutes, until smooth.
Spread mixture evenly into prepared tin. Push apricot halves cut – side up into the mixture, arranging them in neat rows.
Place in the oven and bake for 20 minutes. Sprinkle with about 2 tablespoons extra sugar, then return to the oven and cook for another 20 minutes, or until a skewer inserted into the centre comes out clean.
Cut into fingers, with two apricot halves per slice.
