INGREDIENTS:
150g (1 cup) plain flour
3 eggs
125ml (½ cup) thickened cream
125ml (½ cup) milk
1 cup chopped bacon
80g (1 cup) grated pizza cheese
2 tblsp chopped fresh chives, plus extra, to serve
Fresh basil leaves, to serve
METHOD:
Preheat your oven to 200C / 180C fan forced.
Lightly spray two, 12-hole patty pans with oil.
Use a balloon whisk to whisk the flour, eggs, cream and milk in a bowl.
Season. Stir in the bacon, cheese and chives. Divide the mixture among the prepared pans.
Bake for 12 minutes or until golden brown. Serve sprinkled with basil and extra chives.
