Nana Nola's Recipe

A weekend special. A very easy and tasty meal served with a salad. A good idea is to keep a
packet of ready-made bases in your fridge. You can also use pita breads or if time permits make
your own.
Vegetarian Pizza
2 ready-made bases
1 tsp olive oil
1 small red onion, finely sliced
1 garlic clove, crushed
1 small zucchini, sliced
½ x 400g can diced tomatoes
1 tblsp shredded fresh basil leaves
½ medium red capsicum, thinly sliced
½ medium green capsicum, thinly sliced
4 (120g) bocconcini cheese, sliced
½ cup grated reduced-fat mozzarella cheese
Place base on a pizza tray. Preheat oven to 240°C / 220°C fan-forced.
Heat oil in a saucepan over medium heat. Add onion, garlic and zucchini. Cook, stirring for five minutes or until
onion has softened. Add tomatoes. Bring to the boil. Reduce heat to medium/low. Simmer for five minutes or until
sauce has thickened. Spread pizza base with tomato mixture. Top with capsicum, bocconcini and mozzarella and
basil leaves.
Bake for 15 to 20 minutes or until cheese has melted and base is crisp. Serv
