Anzac Biscuits
INGREDIENTS
170g caster sugar 125g plain flour
90g rolled oats 90g desiccated coconut
125g butter 60ml water
1 tblsp golden syrup ½ tsp bicarb soda
METHOD
Place sugar, flour, oats and coconut in a bowl to combine.
Melt butter and stir in water, golden syrup and soda. Pour over dry ingredients
and combine well.
Place in heaped teaspoons of mixture on baking paper pressing them down
gently.
Bake for about 15-20 minutes at 160 degrees C.
Leave biscuits on trays for a few minutes to cool before placing on a wire rack.
Sometimes I change the 90g desiccated coconut to half each of desiccated
and lightly shredded coconut.
