This is an old favourite, when you can’t think of anything else for dinner. Served with mashed potatoes, gravy and vegies, always a popular meal.
Ingredients:
250g sausage meat
500g extra lean beef mince
1 cup fresh wholemeal breadcrumbs
1 small brown onion, grated
1 carrot, peeled, coarsely grated
2 tblsp tomato sauce
2 tblsp Worcestershire sauce
2 tblsp flat-leaf parsley leaves, chopped
1 clove garlic, chopped finely
¼ cup barbecue sauce
Herbs to taste, ie: mixed herbs, basil
Method:
Preheat oven to 180°C. Line a log pan with baking paper. Place minces, breadcrumbs, onion, carrot, garlic, tomato sauce and parsley in a large bowl. Season with salt and pepper.
Using clean hands, mix until well combined.
Place mixture in log pan. Bake for 40 minutes or until firm in touch. Remove from oven.
Drain excess fat.
Spoon barbecue sauce over top of meat loaf. Return to oven and cook for a further 10 minutes or until top is glazed. Stand on tray for five minutes.
I usually place foil over the pan for the first half hour then remove it.
