Nanna Nola’s Oldtime Recipe Of The Week
My long-time friend who is also a very talented sportsperson and a good cook gave me this recipe. It is a light fruit cake and very tasty. Thank you Raelene.
Cream Cheese Fruit Cake
90g butter 125g packed cream cheese
2 tsps grated lemon rind ¾ cup castor sugar
2 eggs 1 cup (125g) sultanas
¾ cup chopped raisins ¾ cup currants
¾ cup chopped glace apricots 1 cup quartered glace cherries
¼ cup brandy ¾ cup plain flour
½ cup SR flour
METHOD
Line a deep 20cm round cake pan with 2 sheets of paper.
Cream butter, cream cheese, rind and sugar in small bowl with electric mixer until light and fluffy.
Beat in eggs quickly one at a time, beat only until combined.
Transfer mixture to large bowl, stir in fruit and brandy then the sifted flours in two lots.
Spread mixture into prepared pan, bake in moderately slow oven for about 1½ hours.
Cover with foil, cool in pan. Remove foil and pan, wrap cake in plastic wrap. Store in cool dark place.
Keeping time: 1 month.
