Nanna Nola’s Oldtime Recipe Of The Week

 This tasty quiche is quick and easy to make. You can also use some roasted diced pumpkin or sweet potato. Can also be made in muffin tins and handy for school lunches.

INGREDIENTS

125g bacon pieces           ½ cup SR flour

1 cup cream                   4 eggs, lightly beaten

125g tasty cheese 1 grated onion

Salt and pepper  Parsley

METHOD

 Fry bacon and onion. Mix all ingredients together. Put into quiche dish – 9½”. Cook in a moderate oven for 40 minutes or until set. I put some grated zucchini in as well. You can sprinkle some cheese on top.

 I cook 200°C gas for 20 minutes. Test centre with a skewer.

 When cooked, turn off oven, open door and leave quiche to cool. Best left to cool and heated to serve later.
